Everything about merging Tom Ka Gai soup and a Smoothie sounds wrong… … but you really want to – don’t you? Don’t worry there is no boiled galangal in here, we’re just going to borrow some of the other main ingredients to make a hot and sour coconutty concoction!
Ingredients
- 1/2 can Creamed Coconut
- 1/2 can Coconut Water
- 1 Fairtrade Lime
- 1 Fairtrade Banana
- Cinnamon powder to taste
- Chilli powder to taste
Instructions
- Add coconut products to smoothie maker along with the banana.
- Squeeze the lime juice into the smoothie maker (watch out for the pips).
- SMOOTH!!!
- Add chilli and cinnamon to taste (take it easy at first)
- SMOOTH!!!
- Pour into a short glass
- Add decorative chilli or cinnamon – or why not shave some lemongrass onto the top?
This smoothie is a good compliment to a desert after a Thai meal or to go with anything spicy as it will cool your taste buds despite the chilli!
